A Charles Dickens Christmas Feast – Part 3

Charles-Dickens-part03 Easy Whipped Cream

Better than the whipped cream that comes in the squirty canisters!
Makes 6 servings

Prep: 5 minutes
Ready: 5 minutes

Shopping List:

  • 120 ml or ½ cup heavy cream, chilled
  • 115 gr or ½ cup sour cream
  • 30 gr or ¼ cup confectioners’ sugar
  • 3 ml or ½ teaspoon vanilla extract


  1. Combine the cream, sugar, sour cream and vanilla in a medium bowl.
  2. Use an electric mixer to whip to stiff [but not grainy] peaks.
  3. Chill until using.
  4. Use within one day.

slagroomNote 1: Chill your bowl and beaters about 30 minutes before whipping.

Note 2: The sour cream makes all the difference in the world. This has a delightful flavor and consistency.

Wassail Punch

Makes 32 servings

Prep: minutes

  • 300 gr or 1½ cups white sugar
  • 8 whole cloves
  • 710 ml or 3 cups water
  • 3 cinnamon sticks
  • 355 ml or 1½ cups orange juice
  • 235 ml or 1 cup lemon juice
  • 3 liter or 1 gallon apple juice


  1. In a saucepan, combine the sugar, cloves, water, and cinnamon.
  2. Bring to a boil, and continue to boil for 10 minutes.
  3. Remove from heat, cover, and allow to cool for 1 hour.
  4. Stir in the orange juice, lemon juice, and apple juice.
  5. Return to the heat, and boil for 10 to 15 minutes.
  6. Remove cloves and cinnamon sticks before serving.

Note: Use apple cider instead of apple juice, for that extra umph.
