A Charles Dickens Christmas Feast – Part 2

Makes 8 servings

Prep: 15 minutes
Cook: 5 minutes

Shopping List:

  • 95 gr or 1 cup sliced almonds
  • 45 ml or 3 tablespoons red wine vinegar
  • 80 ml or ⅓ cup olive oil
  • 30 gr or ¼ cup fresh cranberries
  • 15 ml or 1 tablespoon Dijon mustard
  • 1 gr or ½ teaspoon minced garlic
  • 3 gr or ½ teaspoon salt
  • 1 gr or ½ teaspoon ground black pepper
  • 30 ml or 2 tablespoons water
  • 30 gr or 2 tablespoons white sugar
  • 1/2 red onion, thinly sliced
  • 115 gr or 4 ounces crumbled blue cheese
  • 450 gr or 1 pound mixed salad greens

blue_cheeseTO MAKE:

  1. Preheat oven to 190° C or 375° F.
  2. Arrange almonds in a single layer on a baking sheet.
  3. Toast in oven for 5 minutes, or until nuts begin to brown.
  4. In a blender or food processor, combine the vinegar, oil, cranberries, mustard, white sugar, garlic, salt, pepper, and water.
  5. Process until smooth.
  6. In a large bowl, toss the almonds, onion, blue cheese, and greens with the vinegar mixture until evenly coated.

Note: Some people don’t like cranberries, so substitute them with raspberries. Same goes for blue cheese, use feta instead.

Plum Pudding

Makes 6 servings

Prep: 20 minutes
Cook: 2 hours

  • 55 gr or ¼ cup butter
  • 50 gr or ⅓ cup brown sugar
  • 235 ml or 1 cup milk
  • 12 dates, pitted and chopped
  • 80 gr or ½ cup raisins
  • 35 gr or ¼ cup dried currants
  • 60 gr or ¼ cup candied mixed fruit peel, chopped
  • 1 orange, zested
  • 5 gr or 1 teaspoon baking soda
  • 125 gr or 1 cup self-rising flour
  • 5 gr or 2 teaspoons ground cinnamon
  • 1 gr or 1 pinch salt

TO MAKE:

  1. Well grease a pudding mold.
  2. In a large saucepan combine butter, sugar, milk, dates, raisins, currants, mixed fruit peel and zest of the orange; bring to a boil.
  3. Remove from heat and stir in baking soda.
  4. Sift in the flour, cinnamon and salt; mix gently until blended.
  5. Pour into prepared pudding mold.
  6. Cover with a double layer of greased wax paper and steam for 2 hours.

Note: Serve it warm with ice cream or with a brandy sauce.

Old Fashioned Gingerbread

Ready: 2 hours

Shopping List:

  • 100 gr or ½ cup white sugar
  • 115 gr or ½ cup butter
  • 1 egg
  • 235 ml or 1 cup molasses
  • 310 gr or 2½ cups all-purpose flour
  • 7 gr or 1½ teaspoons baking soda
  • 2 gr or 1 teaspoon ground cinnamon
  • 2 gr or 1 teaspoon ground ginger
  • 1 gr or ½ teaspoon ground cloves
  • 3 gr or ½ teaspoon salt
  • 235 ml or 1 cup hot water

TO MAKE:

  1. Preheat oven to 175° C or 350° F.
  2. Grease and flour a 9-inch square pan.
  3. In a large bowl, cream together the sugar and butter.
  4. Beat in the egg, and mix in the molasses.
  5. In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves.
  6. Blend into the creamed mixture.
  7. Stir in the hot water.
  8. Pour into the prepared pan.
  9. Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean.
  10. Allow to cool in pan before serving.

Note: If there are leftovers… Toast a slice in a toaster over, then drizzled with caramel sauce [homemade is the best] and add a scoop of vanilla ice cream.
