2013-menu-wk-3Meatloaf with Fried Onions and Ranch Seasoning

Makes 6 servings

Prep: 10 minutes
Cook: 60 minutes

Shopping List:

  • 680 gr or 1½ pounds ground beef
  • 2 eggs, beaten
  • 60 ml or ¼ cup ketchup
  • 150 gr or ¾ cup herb-seasoned dry bread stuffing mix
  • 15 gr or ½ (1 ounce) package dry Ranch-style dressing mix
  • 85 gr or 1 (6 ounce) can French-fried onions

  1. Preheat oven to 175° C or 350° F.
  2. In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix and fried onions.
  3. Shape into loaf and fit into 9 x 5 inch loaf pan.
  4. Bake, covered loosely with foil, at 175° C or 350° F for 50 to 60 minutes, or until meat is thoroughly cooked.

Note: You can also add some garlic powder and just a splash of Worcester sauce.

Cucumbers in Sour Cream

Makes 12 servings

Prep: 10 minutes
Cool: 4 hours

  • 2 cucumbers, thinly sliced
  • 230 gr or 1 (8 ounce) container sour cream
  • 60 ml or ¼ cup distilled white vinegar
  • 65 gr or ⅓ cup white sugar
  • salt and freshly ground black pepper to taste.

TO MAKE:

  1. Place the cucumber slices in a container and cover with cold water.
  2. Refrigerate 4 hours to overnight.
  3. Whisk the sour cream, vinegar, sugar, and salt in a mixing bowl until the sugar has dissolved.
  4. Drain the cucumbers and squeeze out the excess water; add to the bowl and mix to coat with dressing.

Note: The dressing is very good, the perfect mixture of sweet and tart.

Mashed Red Potatoes

Makes 6 servings

Prep: 5 minutes
Cook: 30 minutes

  • 1500 gr or 8 medium red potatoes, cubed
  • 6 gr or 2 teaspoons crushed garlic
  • 115 gr or ½ cup butter or margarine
  • 60 ml or ¼ cup half-and-half cream
  • 1 gr or ¼ teaspoon steak seasoning
  • 1 gr or ¼ teaspoon garlic powder

TO MAKE:

  1. Place the potatoes into a large pot, and fill with enough water to cover.
  2. Add 1 teaspoon of the crushed garlic to the water for flavor.
  3. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork.
  4. Drain the potatoes, and add the butter.
  5. Mash until the butter is melted.
  6. Mix in the half-and-half, steak seasoning, garlic powder and remaining garlic.
  7. Mix potatoes with an electric mixer until smooth.

Note: These red-skinned mashed potatoes are just the creamiest. They are always a hit with company. Just a warning they are addictive!
