Sunday In The Park With…

PINK NOORD!

Okay, it was not busy at our PN picknick, but it was very nice. Around 1 pm the first Pink Northerners arrived. We quickly put up the banners, the pennants were hung and picnic rugs were rolled out . The glasses with Pink Prosecco went around and the first bites were consumed. Olives, sandwiches and salads and several glasses of wine, mineral water and beer followed. Before we knew it was 6 pm. I want to thank everyone for the great afternoon I had, the nice conversations and the stupid, but hilarious, comments.

Amsterdam Pride Opened With A Bang

AGP-we-are-proudLast night Amsterdam Pride opened with a bang. The sounds came from thunder and the heavens opened with a deluge. It wasn’t stopping the invited 300+ guests since most of the party was indoors.

We in the northern parts of town, were not invited, but that didn’t stop us. We were preparing for our first PINK NOORD PICKNICK. [I know in the US you would write it as a picnic, but every country has its own way of spelling it. Even between UK English and US English are big differences!] This picknick will happen later today at the Noorderpark.

I still have to drain the cucumber slices, slather slices of bread with a dressing and put deli meats, salmon, cucumber and sweets on them. The blush wine is still cooling and so is the bubbly, buttermilk, cheeses, salads, olives and soda. I will take them out at the last moment. Paper plates, plastic cutlery and strong drinking glasses are already packed. Including pepper and salt shakers and also important, but not on a slice of bread, a parasol and blanket.

Of course all of this is far too much for me alone, one slice of bread and a glass of milk is enough, but to attract others you just have to feed them.

I have no idea what the turn out will be, at least the other team members will be there with their partners and maybe some friends as well. And when it’s a no-show of the others… then it’s their problem, not mine.

Yes, lately in a movie theater, then I used paper tissues and left some extra for the one after me.

No, the others make noice too

I line the seat, you never know what someone ‘brought’ with them.

Released

Hospital_signThis morning my Mum was released from hospital. All in all she stayed there a week, and some of the infections are gone and others are better than before.

She dressed herself just before breakfast, but then still had to wait over 3 hours before the release was final. Of course she didn’t like it when they needed another heart film. Turned out they needed that one for her release.

Her own cardiologist is on vacation, so another one took over, my cardio specialist. He told me he figured out who was connected to whom after his departmental tour on Sunday. And also that my heart problems are not genetic. [Always good to know.]

Sun On Your Plate #08 – Pork Chops

Makes 6 servings

Prep: 15 minutes
Cook: 45 minutes
Ready: 2 hours

Shopping List:

  • 1 clove garlic, minced
  • 3 gr or 1 teaspoon chili powder
  • ½ gr or ¼ teaspoon cayenne pepper
  • 1 pod cardamom seeds
  • 3 ml or ½ teaspoon water, or as needed
  • 5 ml or 1 teaspoon vegetable oil
  • 60 ml or ¼ cup rice wine vinegar
  • 100 gr or ½ cup sugar
  • 1 mango – peeled, seeded, and chopped
  • 2 gr or ¼ teaspoon salt
  • ½ gr or ½ teaspoon cilantro
  • 10 ml or 2 teaspoons lemon juice
  • 1 fresh jalapeno pepper, minced
  • 355 ml or 1½ cups unsweetened applesauce
  • 3 pineapple rings, chopped
  • 1 gr or 1 pinch white pepper
  • 80 ml or ⅓ cup soy sauce
  • 80 ml or ⅓ cup rice wine vinegar
  • 6 pork chops

karbonade-largeTO MAKE:

  1. With a mortar and pestle, mash together the garlic, chili powder, cayenne, and cardamom seeds.
  2. Mix in enough water to form a paste.
  3. Heat the oil in a saucepan over medium heat.
  4. Stir in spice paste, and cook until it begins to bubble, about 30 seconds.
  5. Stir in vinegar; cook without boiling for 2 minutes.
  6. Stir in sugar until it dissolves.
  7. Mix in mango, salt, cilantro, lemon juice, and jalapeno; simmer 20 minutes.
  8. Stir in applesauce and pineapple; simmer 10 minutes more.
  9. Season with white pepper.
  10. Place in a bowl, cover, and refrigerate until ready to use.
  11. To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar.
  12. Place pork chops in a large resealable plastic bag, and pour marinade over chops.
  13. Seal tightly, and place in the refrigerator for 1 hour.
  14. Prepare grill for medium-high heat.
  15. Drain marinade from bag, and heat in a saucepan until boiling.
  16. Lightly oil grill grate.
  17. Place pork chops on the hot grill.
  18. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade.
  19. Warm remaining salsa over medium-low heat.
  20. Serve pork chops topped with the salsa.

Note: Works also great with chicken!
