La Cucina – Lime Chicken

2012-CUCINA Lime Chicken with Soft Tacos

Shopping List:

  • 275 gr or 10 ounces skinless, boneless chicken breast meat – cubed or cut in strips
  • 10 ml or 2½ teaspoons red wine vinegar
  • ¼ lime, juiced
  • 2 gr or ½ teaspoon white sugar
  • 1 gr or ¼ teaspoon salt
  • ½ gr or ¼ teaspoon freshly ground black pepper
  • 1 green onions, chopped
  • 1 clove garlic, minced
  • ½ gr or ½ teaspoon dried oregano
  • 4x 15 cm or 6 inch flour tortillas
  • 1 tomato, diced
  • 10 gr or 1¼ tablespoon shredded lettuce
  • 10 gr or 1¼ tablespoon shredded Monterey Jack cheese
  • 25 ml or 1¼ tablespoon salsa

TO MAKE:

  1. Saute chicken in a medium saucepan over medium high heat for about 20 minutes.
  2. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano.
  3. Simmer for an extra 10 minutes.
  4. Heat an iron skillet over medium heat.
  5. Place a tortilla in the pan, warm, and turn over to heat the other side.
  6. Repeat with remaining tortillas.
  7. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.

Note: Use cilantro instead of oregano.
