Popeye’s Salad + Poppy Seed Dressing

Shopping List:

  • 170 gr or 1 [6 ounce] package baby spinach leaves
  • 40 gr or ⅓ cup cubed Cheddar cheese
  • 1 Fuji apple – peeled, cored and diced
  • 55 gr or ⅓ cup finely chopped red onion
  • 30 gr or ¼ cup sweetened dried cranberries
  • 35 gr or ⅓ cup blanched slivered almonds
  • 45 ml or 3 tablespoons poppy seed salad dressing

TO MAKE:

  1. In a large salad bowl, combine the spinach, Cheddar cheese, apple, red onion, cranberries and slivered almonds.
  2. Toss with poppy seed dressing just before serving.

Note: The combinations are endless. For fruit you can use fresh local and in season like peaches, blueberries, nectarines, kiwi, or apricots. And for nuts what catches your fancy like pecans, walnuts, almonds, or hazelnuts. And even the cheese can be substituted by blue, havarti, cheddar, swiss, jack or colby – all are great. Even the dressing can be switched.

Poppy Seed Dressing

Makes 14 servings

Shopping List:

  • 65 gr or ⅓ cup white sugar
  • 120 ml or ½ cup white vinegar
  • 6 gr or 1 teaspoon salt
  • 3 gr or 1 teaspoon ground dry mustard
  • 4 gr or 1 teaspoon grated onion
  • 235 ml or 1 cup vegetable oil
  • 8 gr or 1 tablespoon poppy seeds

TO MAKE:

  1. In a blender or food processor, combine sugar, vinegar, salt, mustard and onion and process for 20 seconds.
  2. With blender or food processor on high, gradually add oil in a slow, steady stream.
  3. Stir in poppy seeds.

Note: Use raspberry vinegar instead of white vinegar, for extra taste.
