Savory Chocolate Dish #5

Turkey Mole Mexicana

Makes 4 servings

Prep: 45 minutes
Cook: 90 minutes

Shopping List:

  • 1300 gr or 2½ lbs turkey pieces
  • 1 onion quartered
  • 4 tablespoons blanched almonds
  • 2 tablespoons sesame seeds
  • 2 tablespoons raisins
  • 3 black peppercorns
  • 1 clove
  • 2 teaspoons ground cinnamon
  • 2 teaspoons red chili paste [or more]
  • 180 ml or ⅔ cup water
  • 1 onion, finely chopped
  • 2 gloves garlic, finely chopped
  • 3 tomatoes, peeled and chopped
  • 60 gr or 1 cup fine dry bread crumbs
  • 1 tablespoon sunflower oil
  • 30 gr or 1 ounce semisweet [dark] chocolate
  • Salt and freshly ground black pepper to taste


  1. Place the turkey pieces in a large saucepan with the onion quarters, cover with water, and simmer until tender, about 60 minutes
  2. Strain and reserve the stock
  3. Skin the meat and cut in bite-sized pieces
  4. Transfer to a large earthenware pot
  5. Preheat the oven to 180°C or 350°F
  6. Sauté the almonds and sesame seeds in a dry frying pan over medium heat until lightly browned
  7. Transfer to a food processor and chop with the raisins, peppercorns, clove and cinnamon until finely ground
  8. Add the chili paste, water, chopped onion, garlic, tomatoes and bread crumbs and process again until smooth
  9. Sauté the processed mixture in the oil in a large frying pan over medium heat for 5 minutes
  10. Pour 180 ml or ⅔ cup of th reserved stock into a small saucepan and add the chocolate
  11. Stir over low heat until the chocolate has melted
  12. Add to the sautéed mixture and season with salt and pepper
  13. Pour the sauce over the turkey pieces
  14. bake until heated through and the flavours have mingled, about 30 minutes
  15. Serve hot

Note: Goes well with mashed potatoes and green beans
