Lime Chicken with Soft Tacos

Shopping List:
- 275 gr or 10 ounces skinless, boneless chicken breast meat – cubed or cut in strips
- 10 ml or 2½ teaspoons red wine vinegar
- ¼ lime, juiced
- 2 gr or ½ teaspoon white sugar
- 1 gr or ¼ teaspoon salt
- ½ gr or ¼ teaspoon freshly ground black pepper
- 1 green onions, chopped
- 1 clove garlic, minced
- ½ gr or ½ teaspoon dried oregano
- 4x 15 cm or 6 inch flour tortillas
- 1 tomato, diced
- 10 gr or 1¼ tablespoon shredded lettuce
- 10 gr or 1¼ tablespoon shredded Monterey Jack cheese
- 25 ml or 1¼ tablespoon salsa
TO MAKE:
- Saute chicken in a medium saucepan over medium high heat for about 20 minutes.
- Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano.
- Simmer for an extra 10 minutes.
- Heat an iron skillet over medium heat.
- Place a tortilla in the pan, warm, and turn over to heat the other side.
- Repeat with remaining tortillas.
- Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.
Note: Use cilantro instead of oregano.
