Grilled Provencal Shrimp Skewers
Makes 4 servings
Total: 30 minutes
Main Ingredients:
- 1 1/2 pounds peeled and deveined large shrimp
- 1/2 cup mayonnaise
- 2 teaspoons herbes de Provence
Stock Ingredients: - salt and freshly ground black pepper
TO MAKE:
- Heat grill to medium-high. In a medium bowl, toss the shrimp with the mayonnaise, herbes de Provence, ½ teaspoon salt, and ¼ teaspoon pepper.
- Thread the shrimp onto 8 skewers [soaked if wooden] and grill, uncovered, until cooked through, 3 to 4 minutes per side.
- Serve.
Side dish
Marinated Zucchini and Onion Salad
Makes 4 servings
Total: 55 minutes
Main Ingredients:
- 4 medium zucchini or yellow squash, thinly sliced
- 1/4 small red onion, thinly sliced
- 2 tablespoons olive oil
Stock Ingredients: - kosher salt and black pepper
- 2 tablespoons white wine vinegar
TO MAKE:
- In a colander, toss the zucchini with 1 teaspoon salt.
- Let sit until softened, about 30 minutes; rinse and pat dry.
- In a medium bowl, toss the zucchini with the onion, oil, vinegar, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper.
- Let sit at least 15 minutes and up to 8 hours before serving.
Dessert
Cantaloupe Parfait With Salted Pistachios
Makes 4 servings
Total: 5 minutes
Main Ingredients:
- 1/2 cantaloupe, cut into bite-size pieces
- 1 pint vanilla ice cream
- 1/2 cup coarsely chopped salted roasted pistachios
TO MAKE:
- Divide the cantaloupe and ice cream among bowls.
- Sprinkle with the pistachios
