La Cucina #15 – 3 [main] Ingredients

Main dish

Slow-Braised Lamb Shanks

Makes 4 servings
Total: 180 minutes

Main Ingredients:

  • 4 lamb shanks
  • 8 cloves garlic
  • 2 cups beef stock

TO MAKE:

  1. Slice the garlic thinly and poke holes into the lamb shanks.
  2. Press the garlic into the holes.
  3. Heat a heavy nonstick skillet on medium and allow each lamb shank to brown 5 minutes per side.
  4. Once they are browned, pour in the beef stock.
  5. Cover and allow to simmer for 2 or 3 hours until the shanks are fall-off-the-bone tender.
  6. Serve in the stock gravy with potatoes and a vegetables.

Side dish

Eggplant Roulade

Makes 4 servings
Total: 10 minutes

Main Ingredients:

  • Eggplant, thinly sliced lengthwise
  • Prosciutto
  • Fresh mozzarella

TO MAKE:

  1. Grill eggplant slices until soft.
  2. Lay a slice of prosciutto on top with a slice of fresh mozzarella
  3. Roll up and secure with toothpick
  4. Grill for 3 minutes
  5. Serve

Dessert

Rich and Creamy Frozen Lemon Dessert

Makes 4 servings
Total: 120 minutes

Main Ingredients:

  • 1 12-ounce can frozen lemonade, partially thawed
  • 1 14-ounce can sweetened condensed milk
  • 1 pint heavy cream, whipped

TO MAKE:

  1. Blend lemonade and condensed milk in large bowl.
  2. Fold in whipped cream.
  3. Pour into freezer containers and freeze.

Note: This is unbelievably good. [Don't even try to count the calories in this one!]
