Pasta with Goat Cheese and Basil Oil
Makes 4 servings
Total: 20 minutes
Main Ingredients:
- 12 oz gemelli or other short pasta
- 3 tubs fresh basil leaves
- 4 oz crumbled fresh goat cheese
- Stock Ingredients:
- ½ cup olive oil
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
TO MAKE:
- Cook the gemelli or other short pasta according to the package directions
- Drain and return to pot.
- Meanwhile, in a blender, puree 2 tubs fresh basil leaves with ½ cup of olive oil until smooth
- Pour through a fine meshed sieve and discard the solids
- Toss the pasta with the basil oil
- Add the crumbled fresh goat cheese, salt, pepper and toss again
- Mix in fresh basil leaves
- Serve
Side dish
Arugula salad with White beans and Pesto
Makes 4 servings
Total: 5 minutes
Main Ingredients:
- 4 cups arugula
- 16 oz can cannellini beans, rinsed
- ½ cup pesto
- Stock Ingredients:
- salt and freshly ground black pepper
TO MAKE:
- In a medium bowl, toss the arugula, the rinsed beans and the pesto
- Season with salt and freshly ground black pepper to taste
Dessert
Strawberry Sorbet with Balsamic Syrup
Makes 4 servings
Total: 25 minutes
Main Ingredients:
- ½ cup balsamic vinegar
- 1 quart strawberries
- 1 pint strawberry sorbet
TO MAKE:
- In a small skillet, boil ½ cup balsamic vinegar until reduced by half, 3 to 4 minutes, and let it cool
- Hull and cut the strawberries
- Divide 1 pint of strawberry sorbet among bowls
- Top with the strawberries and balsamic syrup
