Main dish

Pasta with Goat Cheese and Basil Oil

Makes 4 servings
Total: 20 minutes

Main Ingredients:

  • 12 oz gemelli or other short pasta
  • 3 tubs fresh basil leaves
  • 4 oz crumbled fresh goat cheese
  • Stock Ingredients:
  • ½ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

TO MAKE:

  1. Cook the gemelli or other short pasta according to the package directions
  2. Drain and return to pot.
  3. Meanwhile, in a blender, puree 2 tubs fresh basil leaves with ½ cup of olive oil until smooth
  4. Pour through a fine meshed sieve and discard the solids
  5. Toss the pasta with the basil oil
  6. Add the crumbled fresh goat cheese, salt, pepper and toss again
  7. Mix in fresh basil leaves
  8. Serve

Side dish

Arugula salad with White beans and Pesto

Makes 4 servings
Total: 5 minutes

Main Ingredients:

  • 4 cups arugula
  • 16 oz can cannellini beans, rinsed
  • ½ cup pesto
  • Stock Ingredients:
  • salt and freshly ground black pepper

TO MAKE:

  1. In a medium bowl, toss the arugula, the rinsed beans and the pesto
  2. Season with salt and freshly ground black pepper to taste

Dessert

Strawberry Sorbet with Balsamic Syrup

Makes 4 servings
Total: 25 minutes

Main Ingredients:

  • ½ cup balsamic vinegar
  • 1 quart strawberries
  • 1 pint strawberry sorbet

TO MAKE:

  1. In a small skillet, boil ½ cup balsamic vinegar until reduced by half, 3 to 4 minutes, and let it cool
  2. Hull and cut the strawberries
  3. Divide 1 pint of strawberry sorbet among bowls
  4. Top with the strawberries and balsamic syrup
