La Cucina #13 – 3 [main] Ingredients

Main dish

Red Curry-glazed Salmon

Makes 4 servings
Total: 15 minutes

Main Ingredients:

  • 4x 5 oz pieces salmon fillet
  • 1 tablespoon Thai red curry paste
  • 1 teaspoon light brown sugar
  • Stock Ingredients:
  • 1 tablespoon canola oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

TO MAKE:

  1. Heat broiler
  2. Place the four salmon fillets on a foil-lined broiler-proof baking sheet.
  3. In a small bowl, mix together the Thai red curry paste, canola oil, light brown sugar, salt and pepper
  4. Dividing evenly, brush the salmon with the curry paste mixture
  5. Broil until the salmon is opaque throughout, 5 to 7 minutes

Side dish

Bok Choy and Pineapple Slaw

Makes 4 servings
Total: 30 minutes

Main Ingredients:

  • 4 cups thinly sliced baby bok choy
  • 2 cups thinly sliced pineapple
  • 1 cup fresh cilantro leaves
  • Stock Ingredients:
  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

TO MAKE:

  1. In a medium bowl, toss the thinly sliced baby bok choy, with the sliced pineapple and cilantro leaves with the olive oil, pepper and salt
  2. Let sit 15 minutes before serving

Dessert

Chocolate Pound Cake with Ricotta

Makes 4 servings
Total: 25 minutes

Main Ingredients:

  • 4 slices chocolate pound cake
  • ¾ cup room-temperature ricotta
  • ¼ cup honey

TO MAKE:

  1. Dividing evenly, top 4 slices of chocolate pound cake with the ricotta and drizzle with honey

  1. I was reading along, thinking, “Ooh, how delicious.” Then I got to the Chocolate Pound Cake with Ricotta and said, “The hell with the rest of the meal. Let’s skip right to dessert.”
