Leftovers… I call them ingredients!
Mexican Turkey – Low Cal

Serves 4
It’s a great and easy way to use leftover holiday turkey! You can make tacos, burritos, Mexican sandwiches (tortas), etc.

Ingredients:

  • 5 ml or 1 teaspoon vegetable oil
  • 1 onion, chopped
  • 455 gr or 1 pound shredded cooked turkey
  • 3 gr or 1 teaspoon garlic powder
  • 1 large fresh tomato, chopped
  • 120 ml or 1/2 cup water
  • 3 gr or 1 tablespoon chopped fresh cilantro
  • salt and pepper to taste

TO MAKE:

    • Heat the oil in a skillet over medium heat, and cook the onion until tender.
    • Mix in turkey, and season with garlic powder. Stir in the tomato. Pour in water, sprinkle with cilantro, and season with salt and pepper.
    • Cover skillet, and simmer 5 minutes, or until heated through.
      1. ENJOY!

        NOTE:  Combine it in a soft tortilla with cheese, sour cream, avocado, and lime juice and you’ve got a delicious meal.
